Chocolate Banana Oat Cookies


No sugar, flour, or butter is needed anywhere in this recipe! I absolutely love making a batch of these to keep on hand for a little dessert after dinner or an after school snack. My favorite part about these cookies is that the possibilities are endless for what to put inside, get creative! The base of the cookies are just bananas and oats.
Some other ideas to add are...
-dried fruit
-peanut butter
-crushed nuts
-nutella
I added cinnamon, honey, and dark chocolate chips!




Ingrediants:
-1 mashed banana
-1/2 cup or 1 cup of Oats (depending on the extras you add in)
-any other additional items!

  1. Preheat oven to 350 degrees F, and line a cookie sheet with wax paper. I used a knockoff of Silpat, where nothing ever sticks, and it makes cleanup easy! Mine is from Bed Bath and Beyond.
  2. Mash one banana with a fork.
  3. Add all ingredients into a bowl and mix together thoroughly (super simple!). Add in milk/honey if the mixture is too dry, and more oats if it's too moist.
  4. Use an ice cream scoop and press the dough into the scoop to keep hands clean and to form the shape.
  5. Place the cookies on the sheet accordingly. The cookies don't expand much at all. 
  6. Bake for 15-20 min. until the desired consistency is made. I have eaten them soft and gooey, or hard! Let cool for 10 minutes before serving. 
  7. ENJOY! (in moderation)

I have also kept these in the fridge after baking because they are also delicious cold. To store, I put them in an airtight container, although these don't last very long in my house anyway :). Hope you enjoy!
