Coconut Crusted Tofu + Sriracha Peanut Dipping Sauce [VIDEO]

I'll just start off by saying that I've never loved a recipe quite like this one. I've been obsessed with the Youtube channel + blog hotforfood, and I saw them prepare this tofu in taco form. I wasn't in the mood for tacos, so I just made the tofu, and on the fly, this spicy + sweet peanut sauce. Oh my. You could do so many great things with this tofu and sauce - put in a salad, roll it up in some spring rolls, by itself as an appetizer, on a sandwich, or like hotforfood, put them in some tacos! Either way, I'm sure you will enjoy this crunchy, healthy, and hearty recipe. 
The peanut sauce I just made up with ingredients I thought would go well together and it turned out SO well. It is the perfect compliment to the tofu as a dressing or dipping sauce, and customizable to however spicy or sweet you'd like it to be.

Ingredients:
- Block of medium firm or firm tofu
- 1/2 cup all purpose flour
- 1 cup coconut milk
- 1 1/2 Tablespoon lime juice
- 1 1/2 cup breadcrumbs
- 1/4 cup unsweetened shredded coconut
- 1 1/2 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon sea salt

Directions:
1. Preheat oven to 450 degrees and line a baking sheet with parchment paper
2. Cut tofu info cubes.
3. Whisk together the coconut milk and lime juice. Set aside.
4. Mix the breadcrumbs, shredded coconut, garlic powder, chili powder, and sea salt.
5. Toss the tofu into the flour for a light coating, dip in coconut milk, and lastly the breading. Place on baking sheet.
6. Bake for 20 minutes or until golden brown and crispy.

Sriracha Peanut Sauce 

Ingredients:
-2 Tablespoons peanut buter
- Juice from half a lime
- 2 packets of stevia or sweetener or choice
- 3/4 Tablespoon sriracha
- salt and pepper

Directions:
1. Whisk all ingredients together until smooth. Add water until desired consistency.
2. Taste test to see if it needs more hot sauce or sweetener.
