Blueberry Banana Bread Pudding {Vegan}




I'm the kind of person who only likes super simple recipes, and this one has to be my new favorite. It was incredibly easy to make, and not too dry or soggy. It would also be delicious with strawberries, blackberries, raspberries....the list goes on. I wanted to make bread pudding because of this challah bread I bought...although I really really embarrassed myself when buying it at my local bakery. I totally mispronounced the name and the cashier was laughing so much, but now I know that it's not pronounced "ch"allah, but more like "holla" (at least I sure hope so). Also, you might be curious as to how this is a vegan recipe since the challah contains egg, but other than the bread, there are no eggs or dairy. Any day old bread will do! 

Serves 6
Ingredients:
-8-9 cups of cubed, stale bread
-2 cups non dairy milk (soy/almond work best)
-2 flax eggs (one egg is one tablespoon flax to 3 tablespoons water. let sit for 20 minutes)
-2 mashed bananas 
- any spices you'd like (I used 3 teaspoons cinnamon and 1 teaspoon vanilla)
- 1/2 cup of blueberries 
-maple syrup, whipped cream, or ice cream to top
Directions:
1. Preheat the oven to 400 degrees F, and grease a 6"x6" casserole dish. Cut the bread into 1" cubes.
2. In a large bowl, whisk together the milk, flax eggs, bananas, cinnamon, vanilla, and nutmeg. Add the bread to the liquid mixture.
3. Carefully fold the bread in with the liquid using a rubber spatula. Be sure to not squish and break the bread too much. Just make sure all of the bread pieces are all coated! Add in the blueberries nad fold a of more times.
4. Pour into the casserole dish and bake for 35-40 minutes, until the top is browned. Let cool for 15 minutes before serving.

I think this would be absolutely perfect for a Sunday brunch or barbecue. Just top the bread pudding with fresh berries and maple syrup because it's just light and sweet enough for breakfast AND dessert. I hope you all enjoy and thanks for reading!
