Addicting Honey Chex Mix

Gah. I have no words for this guilty and addicting snack. I eat it every year, and whenever my mom and I make a batch it's gone only a day or two!

It requires simple ingredients, and is pretty easy to make. This would absolutely be perfect for New Year's Eve in a pretty bowl at a party, orrrrrr next to my laptop while I re-watch One Tree Hill in bed. I'd say they're both pretty good options.








Ingredients:
1 box of chex cereal (I used crispix)
2 cups mini pretzels
1 cup unsalted nuts
1 1/2 tsp vanilla
1/2 honey
1 1/3 cup brown sugar
10 T of butter (1 stick + 2 T)

Directions:
- In a large microwavable bowl, mix together cereal, pretzels, and nuts.
- On medium heat in a large sauce pan, combine butter, sugar, and honey - do not stir. Boil for 5 minutes and then remove from heat. Add vanilla and now stir.
-Pour liquid over cereal mixture and stir until evenly coated. (Be careful it is VERY hot!)
-Microwave for 1 1/2 minutes and then stir. Microwave for 1 more minute and stir. Pour the mix onto a cookie sheet and let cool. While it is almost done cooling break into small pieces and enjoy!

Baked Sweet Potato Chips

My favorite fall vegetable is....a SWEET POTATO. 
Haha has anyone else seen that vine with Michelle Obama? Anyway, sweet potatoes are definitely one of my favorite foods. I love to just pop them in the microwave for a couple of minutes and top them with cinnamon, or if I have more time, I'll make these delicious (and healthy) sweet potato chips! For today's blogmas #7, here's a simple, but delicious recipe that would be a perfect little snack for the holidays.





Depending if you want a more sweet or savory flavor, you can tailor the spices to what you prefer! On the sweeter side, cinnamon and brown sugar would be yummy, or on the savory side, some rosemary and sea salt would be lovely. I ended up just using some olive oil, sea salt, and mrs.dash!
Ingredients:
-2 medium sweet potatoes, washed
-oil (I recommend olive or coconut)
-sea salt
-spices 
1. Preheat oven to 400 degrees fahrenheit Slice the potato very thinly, so they bake faster. If you prefer a thicker slice, just bake them for loner. I used an old mandolin to get them paper thin.
2. Place them on a baking sheet and toss them with your hands in olive oil. Use just enough oil to coat them evenly. Then, spread them out (one potato per baking sheet), and sprinkle on your desired seasonings.
3. Bake for 12 minutes (for really thin slices), or until desired crispiness. Let them cool for a couple minutes before serving because they will be very hot. Enjoy!

The Calm Playlist

Sometimes when I can't fall asleep or watch another episode of One Tree Hill, I'll play some of these songs. I'll just lay in my bed and face the window thinking about a million things at once. My favorite type of sound I think, are the songs that rely on just a guitar or piano because it's so simple yet so perfect. After what seems like forever, I'll finally fall asleep. This playlist means a lot to me, mainly because it's the music that plays whenever I'm thinking those things that only come out at night.

The Rainy Day Playlist



When most people think of summer, they think of the hot sunny days at the beach. Oddly enough, I absolutely love it when it rains because it's the perfect time to stay in to read or write. There's just something about slow, sad songs that I can't get enough of. If you read my last playlist post, you'll know I listen to a variety of artists and I'm always on the lookout for more. So let me know what your current favorite songs are too! Also, instead of making a playlist on youtube, I used 8tracks because it's actually a lot easier - I totally recommend getting the app. I hope you enjoy these songs as much as I do on those perfect, rainy days.

Banana Berry Chia Smoothie

Nothing screams summer like a wake me up smoothie, right? Throughout this time of year my kitchen is always stocked with a variety of fruit, and I love mixing my favorite kinds! After a recent trip to Trader Joe's while I was in Chicago, I picked up this small bag a of chia seeds. I have been hearing more and more about this fiber packed, omega 3 rich food, and I've been looking into how to incorporate it into different things. One of my favorite ways is to just put a teaspoon into the blender with the smoothie so the seeds puff up thickening the smoothie a bit!





 Also, this is a naturally sweet smoothie that won't need much added sugar because the blueberries I used are from blueberry picking with my family. Use whatever fruit you love - these just happened to be around my kitchen. This is filled with protien, calcium, nutrients, and of course, deliciousness!

Serves 1
Ingredients:
-1 banana
-handful of frozen blueberries 
-4 large strawberries
-splash of almond milk
-1 teaspoon of chia seeds
-sweetener (optional) - I used clover honey
