Baked Sweet Potato Fries

If you know me, you'd know that my favorite food in the entire world has to be sweet potatoes. I love sweet potatoes in pretty much all forms, but my favorite way to make them are by just baking them in the oven. Oh my they are so good. I've tried and failed many times on making these, but now this recipe is finally perfected in how to have them cooked perfectly, while still being low-fat.

Sophomore Year ~

Being a sophomore was weird. I was no longer a little freshman, but I still felt lost in so many other ways.  Looking at everything I've learned, it all came from mistakes. I've just come to accept the fact that they are going to happen and they will suck. And after they suck for awhile, you slowly just move forward until it's not so bad anymore. But I don't think mistakes should define a whole year. Even though it's what stands out in my mind, every blessing God gave has given me far surpasses the bad. Even right now as I'm writing this, I feel down, and I've felt this way for weeks. 
I think to sum up sophomore year, I've learned that you just move forward. Thankfully, no one has to do this alone, because JC is here. Even when you are stubborn, He is still chasing after you. Like literally running towards you. Not only that, but His love comes through the people who care about you. I didn't mean for this to turn into some cheese ball post, but it's the truth and also something I need to hear right now. I think before college, I've always loved people, but I never thought I'd love people this much. And not in a "I'm now an extrovert" kind of way (def still an introvert), but in a "let's all love each other" type of way. Everyone is going though something that requires a hug and some loving (this also includes loving people you don't like wow).
How was my sophomore year? Eventful. So many things happened, so many people were met, and so many lessons were learned. Hopefully it means that I won't make the same mistakes again, but if I do (not on purpose I hope), it's okay. Never stop trying, and keep on loving.

A Green Smoothie That Actually Tastes Good

Whenever I make a green smoothie, many people ask me if it actually tastes good, or if it just looks good. Let me tell you - this recipe is always a no fail with my mom and brother who say they can't even taste the greens. And making it a little thicker into a bowl makes eating this so much more enjoyable. There are no added sweeteners, and only require a few ingredients. Packed with protein, omega-3, fiber, and so much more, this recipe is my go-to for breakfast or after a workout. If you've never had a green smoothie, I'm sure you'll love this recipe even if you don't like spinach. 

-1 frozen banana (it must be frozen when there are brown spots for the most sweetness)
-large handful of spinach
-handful of any frozen berries 
-1 T nut butter
-1/4 cup almond milk (more or less depending on if you want a bowl or drink)
-1 T hemp seeds
-1/2 T chia seeds
-any toppings you'd like!

1. Put all of the ingredients into a high powered blender. I like to put the spinach in first, as it guarantees a completely smooth consistency.
2. Blend until smooth. If you're making a bowl, only add a little bit of milk in the beginning, and then add more or desired consistency. 
3. Serve with your favorite toppings or plain.
